Bread is an essential food in human nutrion in Turkey. It contains groups of vitamin B, proteins and minerals. It is also a good source of energy. In our country there are a lot of deficiencies about production of bread in hygienic conditions. All the controls and punishments are inadequate of putting in order of this subject. The aim of this descriptive study is, to determine the acceptability of bakeries by the regulation of Ministry of Health (MoH) in Umraniye and to describe the problems. This study conducted by controlling of 136 bakeries of Umraniye in Istanbul at 16-25 February 2004. The Control Form of Food Production Centers of MoH is used. 92 (67.6%) of 136 bakeries are worked by the licence and 44 (32.4%) are worked by unlicenced. 6.5% (7 bakeries) of licenced bakeries are found acceptible for MoH regulations. Half of the licenced bakeries (50%, 46 bakeries) have to stopped their working end of the audit process . In consequence of this study bakeries which are worked by unlicenced are determined in Umraniye. Most of them are worked in unaccepted conditions according to the MoH?s regulation rules.
